By allowing tips to be considered part of a server’s wage, we allow their employer to pay them below minimum wage. First of all, tips are never a guarantee, which leaves the employee in the rain if they don’t get them, but still have to accept their low salary. Then it creates a dynamic where the servers have to be so overly friendly in order to “earn” that tip. It creates a superficial power dynamic where waiters almost has to beg for their salary. And, of course, if anything goes wrong, it’s their fault, no tip.
